1/2 tablespoon vegetable oil

1 small white onion, chopped

1 tablespoon minced garlic

1 pound ground pork

1/2 yellow bell pepper, seeded and diced

1/2 green bell pepper, seeded and diced

1 cup shredded baby spinach

1 teaspoon chili powder

1 teaspoon salt

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/2 teaspoon ground black pepper

1 cup heirloom cherry tomatoes, quartered

juice of 1 lime

4 tablespoons fresh cilantro, chopped

1/2 cup low-fat shredded cheddar cheese

Directions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and stir occasionally until softened and fragrant, about 5 minutes.

  2. Add the minced garlic, ground pork, diced yellow and green bell peppers, and shredded spinach to the skillet. Stir continuously, breaking up the pork with a spoon or spatula, until the meat crumbles and begins to cook through, approximately 6 minutes.

  3. Add the chili powder, salt, ground cumin, smoked paprika, and ground black pepper. Stir well to distribute the seasonings evenly throughout the pork mixture.

  4. Continue cooking for 2–3 minutes more, stirring frequently, until the pork is fully cooked and no pink remains. Use a meat thermometer to confirm the internal temperature has reached 160 degrees Fahrenheit. Remove the skillet from heat and set the pork mixture aside to cool slightly.

  5. In a small bowl, combine the quartered heirloom cherry tomatoes, fresh lime juice, and chopped cilantro. Season the tomato mixture with a pinch of additional salt if desired, and toss gently to combine.

  6. Arrange 12 serving cups on a platter. Spoon equal portions of the cooked pork mixture into each cup, filling them evenly.

  7. Top each taco cup with a spoonful of the fresh lime-cilantro tomato mixture and sprinkle with shredded cheddar cheese.

  8. Serve the taco cups immediately while the pork is warm and the cups are still crisp.
