Ingredients
1 cup honey
1 cup peanut butter
3 1/2 cups rolled oats
1/2 cup raisins
1/2 cup shredded carrot
1/2 cup unsweetened shredded coconut
Directions
Preheat your oven to 350°F.
Peel and grate the carrot to yield 1/2 cup of shredded carrot.
In a large saucepan, combine the honey and peanut butter over low heat, stirring occasionally until fully melted and blended together, about 3–4 minutes.
Remove the saucepan from heat and turn off the burner.
Add the rolled oats, raisins, shredded carrot, and shredded coconut to the saucepan. Stir well until all ingredients are evenly combined.
Allow the mixture to cool for several minutes until it is cool enough to handle safely with your bare hands.
Transfer the mixture into a 9×13-inch baking pan and press it firmly and evenly into the bottom of the pan with your hands or the back of a spoon.
Bake in the preheated oven for 25 minutes until the bars are set but still slightly soft.
Remove from the oven and let cool completely in the pan, about 20–30 minutes.
Cut the cooled mixture into 24 bars of equal size using a sharp knife.
Store in an airtight container at room temperature for up to 1 week.
