Ingredients

1/4 head green cabbage, thinly sliced

2 carrots, peeled and grated

1/4 cup raisins

1/4 cup unsalted peanuts

1/2 cup low-fat vanilla yogurt

1 tablespoon fresh orange juice

Directions

  1. Wash your hands thoroughly with soap and water before preparing the slaw.

  2. Remove the outer leaves from the green cabbage and slice the head into thin, uniform strips using a sharp knife or mandoline.

  3. Transfer the sliced cabbage to a large mixing bowl.

  4. Peel the carrots with a vegetable peeler and grate them using a box grater or food processor until fine and evenly sized.

  5. Add the grated carrots to the bowl with the cabbage.

  6. Stir in the raisins and peanuts to the cabbage and carrot mixture.

  7. Toss all the ingredients together gently with a wooden spoon or spatula until evenly combined.

  8. In a small separate bowl, whisk together the low-fat vanilla yogurt and fresh orange juice until smooth and well combined.

  9. Pour the yogurt and orange juice dressing over the cabbage mixture and stir thoroughly until all the vegetables are evenly coated. Serve immediately or refrigerate until ready to serve.
