Ingredients
1 very ripe banana, mashed
1 cup mixed berries (raspberries, strawberries, and blueberries), chopped if large
½ cup cooked quinoa, cooled
2 oz. light cream cheese, at room temperature
½ cup plain Greek yogurt
Honey, stevia, or another sweetener, to taste (optional)
Directions
Prepare the quinoa according to package instructions if not already done, then allow it to cool completely.
In a medium bowl, combine the room-temperature cream cheese, Greek yogurt, and mashed banana. Whisk or use a hand mixer until the mixture is completely smooth and well blended.
Taste the cheesecake mixture and add sweetener if desired, stirring until fully incorporated.
Divide the cooled quinoa evenly between two serving bowls or jars, placing approximately 2 tablespoons in the bottom of each.
Top the quinoa layer in each bowl with one quarter of the mixed berries and one quarter of the cheesecake mixture.
If desired, repeat the quinoa, berries, and cheesecake layers to create a taller parfait with more layers.
Garnish the top of each parfait with additional fresh berries, if desired, and serve immediately or refrigerate until ready to eat.
