Sunshine Salad checks the boxes for Charlotte: spinach, peppers, and cucumbers are stocked year-round at all five major chains, oranges are cheap and readily available, and there's no hunt-down ingredient. At roughly 80 cents per serving for the produce (assuming a basic vinaigrette from your pantry), it's a solid weeknight option. The 15-minute time is honest if you're not meticulous about knife work; plan for 18 minutes with a real wash and chop. The salad is fresh and feeds a family cleanly, but it doesn't reheat—this is same-night only, which limits its value for planning ahead.
