Ingredients
8 Chicken thighs and drumsticks
1 tablespoon Kosher salt
1 cup All-purpose flour
2 teaspoons Celery seed
½ teaspoon Black pepper
4 tablespoons Butter
Directions
Preheat your oven to 400°F. Pat the chicken pieces dry with paper towels and place them on a clean work surface.
In a shallow bowl, combine the all-purpose flour, kosher salt, celery seed, and black pepper. Mix until evenly blended.
Working with one piece at a time, dredge each chicken piece thoroughly in the flour mixture, shaking off any excess. Arrange the coated pieces skin-side up on a rimmed baking sheet.
Cut the butter into small pieces and scatter evenly over the top of each chicken piece, allowing some to sit directly on the coating.
Place the baking sheet in the preheated oven and bake for 35–40 minutes, until the chicken is golden brown and the internal temperature reaches 165°F when measured with a meat thermometer inserted into the thickest part of the thigh without touching bone.
Remove from the oven and let rest for 5 minutes before serving. The coating will continue to crisp as it cools slightly.
