1 pound 12 ounces frozen potatoes O'Brien, thawed

10 ounces Velveeta cheese, cubed

1 can (10.5 ounces) cream of chicken soup

1/2 cup sour cream

1 can (7 ounces) diced green chiles, drained

1/4 teaspoon black pepper

Directions

  1. Preheat your oven to 375°F.

  2. In a large mixing bowl, combine the thawed potatoes O'Brien, cubed Velveeta cheese, cream of chicken soup, sour cream, drained green chiles, and black pepper. Stir until all ingredients are evenly distributed and the cheese begins to soften.

  3. Grease a 9-inch square baking pan with cooking spray or butter. Pour the potato mixture into the prepared pan, spreading it in an even layer.

  4. Bake in the preheated oven for 30 to 45 minutes. About halfway through (around 15-20 minutes), remove from the oven and stir the casserole to ensure even cooking and cheese distribution. Return to the oven to finish baking until the top is lightly golden and the casserole is heated through.
