Ingredients

8 large eggs

2.5 cups grated sharp cheddar cheese

6 slices bread, cut into 1-inch cubes

2 cups whole milk

1 teaspoon salt

1/2 teaspoon ground black pepper

1 cup cooked corn kernels or frozen corn, thawed

1/2 cup fresh broccoli florets, coarsely chopped (raw for crunchier texture)

1/2 cup fresh mushrooms, thinly sliced

1/4 cup sliced green onions (scallions)

1 cup diced cooked ham and/or cooked Italian sausage

3-4 slices cooked bacon, chopped

1 teaspoon Herbes de Provence or other dried Italian herbs

Directions

  1. Preheat your oven to 350°F (175°C). Grease a 13 × 9-inch baking dish with butter or cooking spray.

  2. Distribute the bread cubes evenly across the bottom of the prepared casserole dish.

  3. Scatter the ham and/or Italian sausage, bacon pieces, corn, broccoli, mushrooms, and green onions over the bread cubes. Sprinkle 1.5 cups of the grated cheddar cheese over the vegetable and meat mixture.

  4. In a large bowl, whisk together the eggs, milk, salt, pepper, and Herbes de Provence until well combined and the eggs are fully beaten in.

  5. Pour the egg mixture slowly over the bread and vegetable layer, pressing down gently with a spatula to ensure the bread absorbs the custard mixture evenly.

  6. Top the casserole with the remaining 1 cup of cheddar cheese.

  7. Bake for 40-45 minutes, or until the top is golden brown and a knife inserted into the center comes out clean (this ensures the eggs have reached a safe temperature of 160°F internally). The casserole should be set but still slightly creamy in the center.

  8. Remove from the oven and let rest for 5 minutes before serving. This allows the structure to set further and makes portioning easier.

This is a solid weeknight casserole with every ingredient available at any Charlotte chain—no special stops needed. The real time is closer to 75 minutes once you account for chopping vegetables and meat, so add 10 minutes to the stated estimate. At roughly $1.20 per serving for eggs, cheddar, ham, bacon, and bread, it's economical and reheats well for grab-and-go breakfasts or lunches, making it genuinely useful for a family. The only friction is herbes de provence, which most readers will skip in favor of just salt and pepper, slightly flattening the intended flavor profile.
