Ingredients

Cooking oil (such as grapeseed) for misting

1 large egg

1/2 cup all-purpose flour

2 cloves garlic, minced

1/2 cup honey

1 1/2 teaspoons kosher salt

1/2 cup milk

1 1/2 cups panko breadcrumbs

1 teaspoon paprika

1 tablespoon rice vinegar

1 to 2 tablespoons sriracha, to taste

1 extra-large sweet onion, sliced into 1/4-inch thick rings

3/4 cup finely shredded unsweetened coconut

Directions

  1. Preheat your oven to 450°F.

  2. Place oven-safe wire racks on two baking sheets. Lightly coat the racks with cooking oil using an oil mister.

  3. Set up three shallow bowls for the breading station. In the first bowl, combine the flour and paprika and whisk together. In the second bowl, whisk together the milk and egg until well blended. In the third bowl, mix the panko, shredded coconut, and salt.

  4. Separate the onion slices into individual rings. Working with one ring at a time, coat it thoroughly in the flour mixture, then dip it in the milk mixture, allowing excess to drip off. Finally, press the ring firmly into the panko-coconut mixture, making sure all sides are evenly coated. Place each breaded ring on one of the prepared wire racks. To maximize space, nest smaller rings inside larger ones. Once all rings are coated and arranged, lightly spray them all over with cooking oil.

  5. Bake for 20–25 minutes, rotating the baking sheets halfway through (after 10 minutes), until the rings are golden brown and crispy.

  6. While the rings bake, prepare the sweet chili sauce. In a small bowl, whisk together the minced garlic, honey, rice vinegar, and sriracha to taste until smooth and well combined.

  7. Remove the onion rings from the oven and let cool for 1–2 minutes. Serve warm alongside the sweet chili sauce for dipping.
