Ingredients

3 slices bacon, diced

1 tablespoon butter

1 head cauliflower, cut into florets and sliced

½ cup cheddar cheese, grated

1 cup chicken stock

1 clove garlic, minced

½ cup mozzarella cheese, grated

½ medium onion, diced

1 tablespoon fresh parsley, chopped

Directions

  1. Place the diced bacon in a medium skillet over medium heat. Cook, stirring occasionally, until the bacon is browned and crispy, about 5 minutes.

  2. Using a slotted spoon, transfer the cooked bacon to a paper towel-lined plate to drain.

  3. Leave approximately 1 tablespoon of bacon grease in the skillet and discard the rest.

  4. Add the diced onion, minced garlic, and cauliflower florets and slices to the skillet with the remaining bacon grease. Cook over medium heat until the vegetables begin to soften, about 5 minutes, stirring occasionally.

  5. Pour in the chicken stock and add the butter and chopped parsley. Reduce the heat to medium-low, cover the skillet, and allow the cauliflower to steam until very tender, about 10 minutes.

  6. Carefully remove the lid and stir in the grated cheddar and mozzarella cheeses. Replace the cover and let sit until the cheeses are completely melted and creamy, about 3 minutes. Top with the reserved bacon pieces before serving.

This is a straightforward, honest dish that hits well for a Charlotte kitchen: all nine ingredients are standard at Harris Teeter, Food Lion, Kroger, and Walmart, with no special stops required. At roughly $1.80–$2.20 per serving, it's affordable, driven mainly by bacon and two cheeses, which balance to reasonable amounts. The stated 25 minutes is accurate if you chop beforehand and work briskly; it's genuinely hands-on from stovetop to plate, not a slow simmer you can ignore. It reheats decently in the microwave and works as weeknight dinner for a family of four, though it's not a showstopper and lacks the seasonal North Carolina angle that would push it higher.
