Ingredients
5 cups spiralized sweet potatoes
1 small yellow onion, halved and thinly sliced
1 cup diced mixed bell peppers
2 roma tomatoes, diced
2 teaspoons minced garlic
1 tablespoon cajun seasoning
2 cans full-fat and light coconut milk
1 tablespoon tomato paste
1 tablespoon fresh lemon juice
3/4 cup nutritional yeast flakes
1/4 cup fresh basil chiffonade
Directions
Heat a large skillet or Dutch oven over medium heat. Add the sliced yellow onion and cook for 3–4 minutes, stirring occasionally, until softened and fragrant.
Stir in the minced garlic and cook for another 30 seconds until aromatic.
Add the diced bell peppers and cook for 3–4 minutes, allowing them to begin softening.
Pour in both cans of coconut milk, stirring well to combine. Bring the mixture to a gentle simmer.
Add the cajun seasoning and tomato paste, stirring thoroughly to distribute the spices evenly throughout the sauce.
Gently stir in the spiralized sweet potatoes and diced tomatoes. Simmer for 8–10 minutes, stirring gently and frequently, until the sweet potato noodles are tender but still hold their shape.
Stir in the nutritional yeast flakes and lemon juice, mixing until fully incorporated and the sauce thickens slightly.
Taste and adjust seasoning as needed. Divide among four bowls and garnish generously with fresh basil chiffonade before serving.
