Ingredients
1 pound fresh mushrooms, sliced
2 cups frozen peas
1/4 cup vegetable stock
1 tablespoon honey
1 teaspoon soy sauce
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
2 green onions, chopped
1/4 teaspoon white pepper
Directions
In a small bowl, whisk together the vegetable stock, honey, and soy sauce until well combined. Set the glaze mixture aside.
Heat a large skillet or wok over medium-high heat. Once hot, add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they release their moisture and begin to brown. Do not add oil; allow the mushrooms to cook in their own liquid.
Add the minced garlic and fresh ginger to the skillet, stirring constantly for about 30 seconds until fragrant.
Add the frozen peas to the skillet and stir well to combine with the mushrooms.
Pour the glaze mixture over the mushrooms and peas. Stir gently to coat everything evenly and cook for another 3-5 minutes until the peas are heated through and the sauce reduces slightly.
Season the stir-fry with white pepper to taste. Top with chopped green onions and serve hot over steamed rice or noodles if desired.
