Ingredients

2 cups sliced strawberries

1 cup rinsed blueberries

1 cup pineapple chunks, fresh or canned

3 tablespoons pineapple juice

2 cups plain low-fat yogurt

1/8 cup sliced or slivered almonds

Directions

  1. In a large bowl, combine the sliced strawberries, blueberries, and pineapple chunks. Drizzle the pineapple juice over the fruit mixture and gently toss to coat all fruit evenly.

  2. Allow the fruit salad to rest at room temperature for 15 minutes. This allows the flavors to meld and the pineapple juice to be absorbed by the fruit.

  3. Divide the fruit salad into 4 individual serving bowls, placing approximately 1 cup of fruit mixture in each bowl.

  4. Top each serving with 1/2 cup of plain low-fat yogurt.

  5. Sprinkle the sliced or slivered almonds evenly over the yogurt topping on each bowl.

  6. Serve immediately while the fruit is fresh and the almonds maintain their crunch.
