Ingredients

2 cups mixed salad greens

1/4 cup sliced tomato

1/4 cup sliced carrots

1/4 cup sliced cucumber

1/4 cup bite-sized green bean pieces

1 cup canned pears, drained and chopped

2 tablespoons walnuts

2 tablespoons raisins

1 1/2 teaspoons white vinegar

1/4 cup non-fat plain yogurt

1 tablespoon fresh orange juice

Directions

  1. Arrange the salad greens, tomato slices, carrot slices, cucumber slices, and green bean pieces in a large mixing bowl.

  2. Add the drained chopped pears, walnuts, and raisins to the bowl with the vegetables.

  3. In a small separate bowl, combine the white vinegar, plain yogurt, and orange juice. Whisk these ingredients together until the dressing is smooth and well combined.

  4. Pour the yogurt-orange dressing over the salad and gently toss all ingredients until evenly coated.

  5. Divide the salad into four portions and serve immediately.
