Fresh lemons are layered with sea salt and their own juice, creating a soft, fermented preserve perfect for adding complex citrus depth to grains, fish, poultry, and vegetables. The lemons gradually soften and develop a mellow tang over time, becoming an essential ingredient in North African and Middle Eastern cooking.

Ingredients

1½ pounds Meyer lemons

½ cup sea salt

1 cup fresh lemon juice

Directions

  1. Wash the Meyer lemons thoroughly under cool running water and pat dry completely. This removes any dirt and ensures proper preservation.

  2. Trim the stem end from each lemon and cut each one into quarters lengthwise, keeping them attached at the base when possible so they hold together.

  3. Spread a thin layer of sea salt on the bottom of a clean glass jar large enough to hold all the lemons.

  4. Place a layer of lemon quarters in the jar, then generously sprinkle them with sea salt. Gently press down on the lemons to release their juices.

  5. Repeat layering lemon quarters and sea salt until all lemons are used, pressing down after each layer to encourage juice release.

  6. Pour the fresh lemon juice over the packed lemons until they are completely submerged. The combination of released lemon juice and added juice should cover the lemons by at least one inch.

  7. Close the jar tightly and store at room temperature away from direct sunlight. The lemons will begin to soften and ferment within days, developing deeper flavor over several weeks.

  8. After one month, the lemons are ready to use. They will keep refrigerated in their brine for up to 6 months. Rinse salt from individual pieces before using if desired.
