Ingredients

2 tablespoons vegetable oil

1 onion, chopped

2 cloves garlic, minced

1 teaspoon grated ginger

1 cup broccoli florets

1 cup sliced bell peppers

1 cup sliced carrots

2 teaspoons soy sauce

Salt and pepper to taste

Cooked rice or noodles for serving

Directions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat until it shimmers, about 1 minute.

  2. Add the chopped onion and cook for 2 minutes, stirring frequently, until it begins to soften.

  3. Stir in the minced garlic and grated ginger, cooking for 30 seconds until fragrant.

  4. Add the broccoli florets, sliced carrots, and sliced bell peppers to the skillet. Stir-fry for 3 minutes, stirring constantly, until the vegetables are tender-crisp.

  5. Drizzle the soy sauce over the vegetables and toss to coat evenly. Cook for an additional 30 seconds.

  6. Season with salt and pepper to taste. Transfer to a serving plate and serve immediately over cooked rice or noodles.
