Ingredients

2 tablespoons Olive oil

1 pound Boneless pork chops (1 inch thick), cut into 1/4-inch slices

8 Cherry tomatoes

1 teaspoon Ground coriander

½ teaspoon Ground cinnamon

¼ teaspoon Cayenne pepper

to taste Kosher salt

to taste Black pepper

Directions

  1. Combine ground coriander, ground cinnamon, and cayenne pepper in a small bowl. Season the mixture generously with kosher salt and black pepper.

  2. Pat the pork slices dry with paper towels. Place them in a large bowl and drizzle with 2 tablespoons of olive oil.

  3. Sprinkle the spice mixture over the pork and toss well to coat all pieces evenly.

  4. Thread the seasoned pork slices onto wooden or metal skewers, alternating with cherry tomatoes. Leave a little space between pieces for even cooking.

  5. Preheat your grill to medium-high heat and lightly oil the grates.

  6. Place the kebabs on the hot grill and cook for 12 to 15 minutes, turning every 3 to 4 minutes, until the pork reaches an internal temperature of 145°F and the exterior is nicely charred.

  7. Remove from the grill and let rest for 2 minutes before serving.
