Ingredients
1¾ cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
¼ cup light brown sugar
1 large egg
¾ cup half and half
¼ cup extra virgin olive oil
1 tablespoon water
½ cup shredded sharp cheddar cheese
1 cup crumbled cooked turkey sausage
Directions
Preheat your oven to 400°F. Line a 12-cup muffin pan with paper cupcake liners to prevent sticking.
In a large mixing bowl, combine the flour, salt, baking powder, and brown sugar. Whisk these dry ingredients together until evenly blended.
In a separate 2-cup measuring cup, pour in the half and half, then add the water, egg, and extra virgin olive oil. Whisk these wet ingredients together until well combined.
Pour the wet mixture over the dry ingredients. Using a wooden spoon or spatula, stir until just combined—the batter should appear thick and slightly lumpy, not smooth.
Gently fold the shredded cheddar cheese and crumbled cooked turkey sausage into the batter until evenly distributed throughout.
Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full using a cookie scoop or spoon.
Bake at 400°F for 20 minutes, until the muffin tops are golden brown and a toothpick inserted in the center comes out clean.
Remove the muffin pan from the oven and allow the muffins to cool in the pan for about 20 minutes before serving or removing from the pan.
