Ingredients

8 Hamburger buns

¼ cup Tamarind-date chutney

¼ cup Dry garlic chutney

¼ cup Fresh coriander chutney

8 Batata vada (spiced potato fritters)

1 tablespoon Oil for toasting

Directions

  1. Slice each hamburger bun in half horizontally to separate the top and bottom pieces.

  2. Heat a griddle or skillet over medium-high heat and lightly oil it. Toast the bun halves cut-side down until golden brown and lightly crispy, about 1–2 minutes per side. Set aside.

  3. Spread a thin layer of tamarind-date chutney on the bottom half of each toasted bun.

  4. Layer a portion of dry garlic chutney on top of the tamarind-date chutney on the same bottom bun half.

  5. Spread a thin layer of fresh coriander chutney on the inside of the top bun half.

  6. Gently press each batata vada to compress it slightly so it sits firmly within the bun.

  7. Place one compressed batata vada on the chutney-topped bottom bun half.

  8. Close the sandwich by placing the top bun half (with coriander chutney) on top of the vada.

  9. Serve warm. Additional chutneys or ketchup may be offered on the side for dipping if desired.
