Ingredients
3 pounds seedless watermelon, rind removed and cut into large dice
2 serrano chili peppers, seeded and finely minced
1 Juice of 1 lime
1/2 cup low-fat feta cheese, crumbled
1/4 cup fresh cilantro leaves
Directions
Add the diced watermelon to a large mixing bowl.
Pour the fresh lime juice over the watermelon and add the minced serrano chili peppers.
Toss everything together gently until the lime juice and chili peppers are evenly distributed throughout the watermelon.
Scatter the crumbled feta cheese and cilantro leaves over the mixture.
Toss once more to gently incorporate the cheese and cilantro without crushing the watermelon.
Cover and refrigerate until ready to serve, allowing flavors to meld.
