A delightful three-layer sandwich combining smoky smoked turkey with sweet and tangy apricot flavors. Cinnamon raisin bread bookends whole wheat bread layered with apricot-mustard spread and creamy apricot-studded cheese. Each sandwich is cut diagonally into four triangular pieces, making them perfect for serving at lunch or dinner.

Ingredients

⅓ cup apricot jam

1 tablespoon Dijon mustard

½ cup honey-nut cream cheese

2 tablespoon chopped dried apricots

16 slices cinnamon raisin bread slices

8 slices whole wheat bread slices

1 pound thinly sliced smoked turkey

Directions

  1. In a small bowl, whisk together the apricot jam and Dijon mustard until well blended. Set aside.

  2. In another small bowl, stir the honey-nut cream cheese and chopped dried apricots together until combined. Set aside.

  3. Lay out all 16 cinnamon raisin bread slices and all 8 whole wheat bread slices. Spread the jam-mustard mixture evenly on one side of 8 cinnamon raisin slices and one side of all 8 whole wheat slices.

  4. Divide the smoked turkey evenly among the 8 jam-spread cinnamon raisin slices, layering it on the spread side. Top each with a whole wheat slice, jam-spread side down, to create the middle layer.

  5. Spread the cream cheese-apricot mixture evenly on one side of the remaining 8 cinnamon raisin slices.

  6. Place each cream cheese-spread cinnamon raisin slice, spread side down, on top of the sandwich stacks to create the three-layer structure.

  7. Using a sharp knife, cut each sandwich diagonally from corner to corner, creating 4 triangular pieces per sandwich. Serve immediately or wrap individually for later.
