Ingredients

2 avocados, halved, pitted and flesh removed

1 cup cherry tomatoes

Fresh cilantro, for topping

2½ tsp. ground cumin

Crumbled reduced-fat feta cheese

Small flour tortillas

1 cup fresh mushrooms, sliced

¾ tsp. garlic powder

1-2 tsp. fresh lime juice

3 spicy black bean burger patties

1 (5-oz) container plain non-fat Greek yogurt

¼ cup olive oil

½ tsp. salt

½ sweet onion, diced

1 zucchini, diced

Directions

  1. Preheat your oven to 400°F.

  2. Spread the diced zucchini, sliced mushrooms, diced onion, and cherry tomatoes on a large baking sheet.

  3. In a small bowl, whisk together the olive oil, garlic powder, salt, and ground cumin until well combined.

  4. Pour the oil mixture over the vegetables and toss with your hands until all pieces are evenly coated. Push the vegetables to one side of the baking sheet and arrange the frozen black bean burger patties on the empty space.

  5. Place the baking sheet in the preheated oven and roast for approximately 20 minutes, stirring the vegetables and turning the burger patties halfway through cooking, until the vegetables are tender and the patties are golden brown.

  6. While the vegetables and patties roast, scoop the avocado flesh into a medium bowl and mash until you reach your desired consistency. Stir in the Greek yogurt, fresh lime juice, and a pinch of salt until smooth and creamy.

  7. Once the oven timer goes off and the vegetables are tender with caramelized edges and the burger patties are golden, carefully remove the baking sheet from the oven.

  8. Chop or tear the roasted burger patties into bite-sized chunks.

  9. Warm the flour tortillas according to package directions.

  10. Assemble each taco by placing burger chunks and roasted vegetables on a warm tortilla.

  11. Drizzle generously with the avocado crema sauce, then sprinkle with crumbled feta cheese and fresh cilantro.

  12. Serve immediately while warm and enjoy.
