Spaghetti Squash with Tomatoes, Basil, and Parmesan

Ingredients
1 1/2 pounds spaghetti squash (about 1 medium squash, halved lengthwise)
1 tablespoon olive oil
2 teaspoons dried basil
1/4 teaspoon dried oregano
3 tablespoons Parmesan cheese, divided
1 cup cherry tomatoes, thinly sliced
Salt and pepper to taste
Directions
Wash and rinse the spaghetti squash under cold running water, then pat dry. Cut the squash in half lengthwise and remove the seeds using a spoon or ice cream scoop.
Place the squash halves cut-side down in a glass microwave-safe baking dish. Add about 1/4 cup water around the squash.
Cover the dish loosely with microwave-safe plastic wrap to retain moisture. Microwave on high for 12 minutes or until the squash is very tender when pressed gently with a fork.
Carefully remove the plastic wrap, allowing the steam to escape, and let the squash cool covered for 3 minutes.
In a large mixing bowl, combine the olive oil, dried basil, dried oregano, and 2 tablespoons of the Parmesan cheese. Whisk or stir until well blended.
Add the sliced cherry tomatoes to the herb mixture and toss gently to coat. Season lightly with salt and pepper according to your taste preferences.
Once the squash is cool enough to handle, use a fork to gently scrape the flesh from the skin in long strands, creating spaghetti-like noodles. Discard the squash skin.
Add the warm squash strands to the tomato and herb mixture, and toss all ingredients together until evenly combined and coated with the oil and seasonings.
Divide the spaghetti squash mixture evenly among four serving plates or bowls. Top each portion with the remaining 1 tablespoon of Parmesan cheese divided equally, and serve immediately while warm.
