Ingredients

4 bone-in pork chops (½ inch thick)

1½ teaspoons chili powder

½ teaspoon ground cumin

½ teaspoon ground black pepper

1½ teaspoons olive oil

¼ cup frozen pineapple concentrate, thawed

½ teaspoon salt

Directions

  1. Preheat your grill to medium heat and lightly oil the grates with oil to prevent sticking.

  2. Warm the olive oil in a small skillet over medium heat. Add the chili powder and cumin, stirring constantly until fragrant and the spices begin to sizzle, about 30 seconds.

  3. Slowly pour the thawed pineapple concentrate into the spiced oil, stirring gently to combine. Simmer the mixture for 3 to 4 minutes, stirring occasionally, until the glaze reduces to about 2 tablespoons and thickens slightly.

  4. Remove the glaze from heat and allow it to cool for 1 minute. Season both sides of the pork chops evenly with salt and pepper, then brush the pineapple glaze generously over all surfaces.

  5. Place the glazed pork chops on the preheated grill and cook for 3 minutes without moving them to develop a golden crust.

  6. Flip the chops and continue grilling for 2 to 3 minutes, until the internal temperature reaches 145°F when measured with a meat thermometer at the thickest part.

  7. Transfer the grilled pork chops to a serving platter and serve immediately while hot.
