Sweet Ginger Seared Tuna

Ingredients
1½ tablespoon Ginger jam
1 tablespoon Soy sauce
1 teaspoon Toasted sesame oil
⅓ pound Sushi-grade tuna steak
Pickled ginger, for serving
Directions
In a small bowl, whisk together the ginger jam, soy sauce, and toasted sesame oil to create a smooth glaze. Set aside.
Pat the sushi-grade tuna steak dry with paper towels and cut into 4 equal portions if needed.
Heat a cast-iron or heavy-bottomed skillet over high heat until it is very hot, approximately 2–3 minutes.
Once the skillet is smoking lightly, carefully add the tuna portions and sear for 45 seconds to 1 minute on the first side without moving them, then flip and sear the second side for another 45 seconds to 1 minute. The exterior should be golden and caramelized while the interior remains rare to medium-rare.
Immediately brush or spoon the ginger jam glaze over the seared tuna on both sides, coating evenly.
Transfer the glazed tuna to serving plates and top with a small portion of pickled ginger. Serve immediately with additional soy sauce on the side if desired.
