Ingredients

1½ tablespoon Ginger jam

1 tablespoon Soy sauce

1 teaspoon Toasted sesame oil

⅓ pound Sushi-grade tuna steak

Pickled ginger, for serving

Directions

  1. In a small bowl, whisk together the ginger jam, soy sauce, and toasted sesame oil to create a smooth glaze. Set aside.

  2. Pat the sushi-grade tuna steak dry with paper towels and cut into 4 equal portions if needed.

  3. Heat a cast-iron or heavy-bottomed skillet over high heat until it is very hot, approximately 2–3 minutes.

  4. Once the skillet is smoking lightly, carefully add the tuna portions and sear for 45 seconds to 1 minute on the first side without moving them, then flip and sear the second side for another 45 seconds to 1 minute. The exterior should be golden and caramelized while the interior remains rare to medium-rare.

  5. Immediately brush or spoon the ginger jam glaze over the seared tuna on both sides, coating evenly.

  6. Transfer the glazed tuna to serving plates and top with a small portion of pickled ginger. Serve immediately with additional soy sauce on the side if desired.
