Ingredients
1 pound ground beef
1 packet taco seasoning
1 can (4.5 ounces) chopped green chiles, drained
1 can black beans, drained and rinsed
5 cups tortilla chips
24 ounces shredded Monterrey Jack cheese
2 roma tomatoes, chopped and seeded
2 green onions, sliced
Directions
In a large skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks until no pink remains, about 7-8 minutes. Drain any excess fat if needed.
Add the taco seasoning packet and the amount of water specified on the package directions. Stir well to combine.
Add the drained chopped green chiles to the skillet. Bring the mixture to a boil, then reduce heat to low and simmer for about 5 minutes, stirring occasionally, until the sauce thickens.
On a grill-safe tray or pizza stone, spread a single layer of tortilla chips as the base.
Distribute one-fourth of the seasoned beef mixture, one-fourth of the black beans, one-fourth of the chopped tomatoes, and one-fourth of the sliced green onions over the chips. Sprinkle one-fourth of the shredded Monterrey Jack cheese on top.
Repeat step 5 three more times with the remaining ingredients, layering in a pyramid shape by making each successive layer slightly narrower than the one below it.
Carefully place the tray on the grill over medium-high heat. Close the grill lid and cook for approximately 10 minutes, until all the cheese is completely melted and bubbly.
Remove from the grill and serve immediately. If desired, garnish with additional fresh tomatoes and green onions.
