Ingredients

1 clove garlic, minced

1/4 teaspoon freshly ground black pepper

8 ounces pork tenderloin, trimmed of fat

1 tablespoon red-wine vinegar

3 tablespoons fresh lime juice

1 canned chipotle chile in adobo sauce plus 1 teaspoon adobo sauce

1/2 cup fresh orange juice

1/2 teaspoon ground cumin

1 teaspoon dried oregano

1/4 teaspoon salt

Directions

  1. In a small bowl, combine the minced garlic, black pepper, salt, cumin, and dried oregano. Mix well to form a spice blend.

  2. In a shallow dish or zip-top bag, combine the red-wine vinegar, lime juice, orange juice, chipotle chile in adobo, and adobo sauce. Finely chop or mash the chipotle to release its flavor into the mixture.

  3. Add the spice blend to the marinade and stir until well combined.

  4. Place the pork tenderloin in the marinade, turning to coat all sides thoroughly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

  5. Remove the pork from the refrigerator 10 minutes before cooking to bring it to room temperature.

  6. Heat a skillet or grill to medium-high heat. Remove the pork from the marinade, allowing excess liquid to drip back into the dish. Reserve the marinade.

  7. Cook the pork tenderloin for 12–15 minutes, turning occasionally, until it reaches an internal temperature of 145°F on an instant-read thermometer inserted into the thickest part.

  8. Transfer the cooked pork to a cutting board and let rest for 3–5 minutes before slicing.

  9. If desired, warm the reserved marinade in a small saucepan over medium heat and serve as a sauce alongside the sliced pork.
