Ingredients
6 flour tortillas
2 cups fat-free, low-sodium refried beans
1 cup shredded cheddar cheese
2 teaspoons chili powder
1 cup shredded romaine lettuce
1 large tomato, chopped
salsa, to taste
light sour cream, optional
non-stick cooking spray
Directions
Wash your hands thoroughly with soap and water before beginning.
Preheat your oven to 350°F (175°C).
Arrange the flour tortillas in a single layer on a baking sheet. Lightly spray both sides of each tortilla with non-stick cooking spray.
Bake the tortillas for 4 minutes, until they become golden and crisp. Remove from the oven and set aside.
In a small bowl, mix the refried beans with chili powder until well combined.
Spread approximately 1/3 cup of the seasoned refried bean mixture evenly onto each crispy tortilla.
Sprinkle the shredded cheddar cheese evenly over the beans on each tostada.
Return the tostadas to the oven and bake for 10 minutes, until the cheese is completely melted and lightly golden.
Remove from the oven and immediately top each tostada with shredded romaine lettuce and chopped tomato.
Serve the tostadas warm with salsa on the side and a dollop of light sour cream if desired.
