A simple and lighter take on classic fried okra, this dish features fresh sliced okra lightly coated with just a touch of oil and seasonings, then pan-fried until golden brown and tender. The minimal oil keeps this crispy-outside, tender-inside side dish healthy without sacrificing flavor. Serve alongside your favorite proteins or as a standalone vegetable side.

Ingredients

2 cups Fresh okra, sliced into 1/4-inch rings

¾ teaspoon Vegetable oil

⅛ teaspoon Salt

⅛ teaspoon Black pepper

Nonstick cooking spray

Directions

  1. Wash the fresh okra pods under cool running water and pat dry with a clean towel. Trim the stem ends and slice the okra into 1/4-inch thick rounds, discarding the very tips.

  2. In a medium bowl, combine the sliced okra with the vegetable oil, salt, and black pepper. Toss gently until all okra pieces are evenly coated with the oil and seasonings.

  3. Coat a large nonstick skillet or frying pan generously with cooking spray.

  4. Place the pan over medium heat and allow it to warm for about 1 minute until the spray is hot but not smoking.

  5. Add the seasoned okra to the hot pan in a single layer. Using a wooden spoon or heat-safe spatula, stir and turn the okra pieces frequently to ensure even browning on all sides, about every 30 seconds.

  6. Continue cooking for 8 to 10 minutes, stirring occasionally, until the okra is golden brown and tender when pierced with a fork.

  7. Transfer the cooked okra to a serving dish and serve hot alongside your favorite condiments such as hot sauce, vinegar-based relish, or ranch dressing.
