Sparkling Cranberry Syrup

A refreshing homemade cranberry syrup that captures the tart, bright essence of fresh cranberries. This simple cordial is simmered gently until the berries burst and release their natural juices, creating a deep ruby liquid sweetened with sugar. Dilute with sparkling water and ice for a festive, bubbly drink that works perfectly as a non-alcoholic beverage or cocktail mixer.

Ingredients
2 cups Fresh cranberries, picked over and cleaned
2 cups Water
2 cups Granulated sugar
Directions
In a medium saucepan, combine the cleaned cranberries and water. Bring to a boil over medium-high heat, stirring occasionally to ensure even heating.
Once boiling, reduce the heat to medium and let the mixture simmer for 15–20 minutes, until all the cranberries have burst and the liquid takes on a deep red color.
Stir in the sugar until completely dissolved. Continue to simmer for another 5 minutes, stirring occasionally to ensure the sugar is fully incorporated and the flavors are well blended.
Remove from heat and allow the mixture to cool to room temperature, about 30 minutes.
Strain the cooled syrup through a fine-mesh sieve into a clean jar or bottle, pressing gently on the solids to extract as much liquid as possible. Discard the spent cranberry solids.
To serve, pour 2–3 tablespoons of the cranberry syrup into a glass filled with ice and top with sparkling water. Stir well to combine and serve immediately.
