Ingredients

5 slices bacon, baked and crumbled

1 pound extra lean ground beef

1 teaspoon olive oil

1 cup diced white onion

1 tablespoon all-purpose flour

3 tablespoons tomato paste

1 tablespoon prepared mustard

2 tablespoons Worcestershire sauce

1/4 cup light sour cream

16 ounces reduced sodium beef broth

4 ounces 2% milk Velveeta cheese, diced

1/2 cup sliced mushrooms

1 cup diced fresh tomatoes

Salt and pepper to taste

Directions

  1. Cook the bacon in the oven at 400°F for 12–15 minutes until crispy. Once cooled, crumble into small pieces and set aside.

  2. Heat the olive oil in a large stock pot over medium heat. Add the diced onion and sauté for 2–3 minutes until softened.

  3. Add the ground beef to the pot and cook, breaking it up with a spoon, until the meat is browned and no longer pink, about 5–7 minutes. Drain excess fat if needed.

  4. Stir in the flour and cook for 1 minute to remove any raw flour taste. Then add the tomato paste, mustard, Worcestershire sauce, and sour cream, stirring until everything is well combined.

  5. Pour in the beef broth and add the diced cheese and sliced mushrooms. Stir constantly until the cheese is completely melted, about 2–3 minutes.

  6. Simmer the soup on medium heat for 3–5 minutes, then season with salt and pepper to taste.

  7. Ladle the soup into bowls and top each serving with a portion of the diced fresh tomatoes and crumbled bacon.
