Ingredients
1 tablespoon chicken broth
1 cup diced onion
2 celery stalks, thinly sliced
2 cloves garlic, minced
20 oz. ground turkey
1 cup carrots, cut into matchsticks
4 cups cabbage, chopped
2 cans (14.5 oz each) diced tomatoes
31 oz. chicken broth (remaining portion)
1 teaspoon basil
2 teaspoons oregano
1 teaspoon parsley
1 teaspoon sage
1 teaspoon thyme
dash Dash of black pepper
Directions
In a large soup pot, warm the 1 tablespoon of chicken broth over medium heat. Add the diced onion, sliced celery, and minced garlic, stirring to coat all vegetables in the broth. Cook for about 2 minutes until softened and fragrant.
Add the ground turkey to the pot, breaking it apart with a spoon as it cooks. Continue cooking over medium heat for 8–10 minutes, stirring occasionally, until the turkey is cooked through with no pink remaining and the internal temperature reaches 165°F.
Stir in the matchstick carrots, chopped cabbage, diced tomatoes (including their juice), and the remaining 31 oz. of chicken broth. Season the mixture with basil, oregano, parsley, sage, thyme, and a dash of black pepper.
Increase heat to medium-high and bring the soup to a boil, stirring occasionally. Once a gentle boil is reached, reduce the heat to medium-low and simmer for approximately 5 minutes, or until the cabbage is wilted and the carrots are tender.
Taste and adjust seasonings as needed. Ladle the soup into bowls and serve hot. Each serving provides a balanced mix of lean protein and vegetables.
Comments
This is a genuinely available, affordable weeknight soup for Charlotte shoppers: all ingredients—ground turkey, cabbage, carrots, onion, garlic, celery, canned tomatoes, and dried herbs—stock reliably at Harris Teeter, Food Lion, Walmart, and ALDI without a special trip. Cost per serving lands around $1.50–$1.80, driven mainly by the ground turkey at roughly $6 per pound. The stated 30 minutes is optimistic; browning the turkey, dicing vegetables, and simmering to develop flavor realistically takes 45 minutes, though most of that is hands-off simmering. It reheats beautifully and feeds a family of four generously with leftovers, requires minimal active attention once the turkey browns, and while it's hearty North Carolina comfort food, it's not a local seasonal showcase—cabbage and carrots are available year-round but peak in fall and winter.
