Ingredients

1 tablespoon cooking oil

3 to 3 1/2 pounds pork shoulder, cut into 3- to 4-inch chunks

2 1/2 teaspoons Chinese five-spice powder

5 cloves garlic, minced

2-inch piece fresh ginger, minced (about 1 ounce)

1/4 cup hoisin sauce

3 tablespoons soy sauce

3 tablespoons honey

2 tablespoons dry sherry

1/3 cup water

2 scallions, thinly sliced

Hamburger buns or slider buns for serving

Directions

  1. Turn on the Instant Pot sauté function and heat the cooking oil until shimmering, about 2 minutes. Working in batches to avoid overcrowding, sear the pork shoulder chunks until deeply browned on all sides, 4 to 5 minutes per batch. Transfer the seared pork to a plate.

  2. To the pot, add the minced garlic and ginger and sauté for 1 minute until fragrant, stirring frequently to prevent sticking.

  3. Sprinkle the Chinese five-spice powder over the garlic and ginger, then stir constantly for 30 seconds to bloom the spices.

  4. Pour in the water, hoisin sauce, soy sauce, honey, and dry sherry, stirring to combine and scraping up any browned bits from the bottom of the pot.

  5. Return the seared pork and any accumulated juices to the pot, stirring to coat with the sauce. Turn off sauté mode.

  6. Close the lid and set the Instant Pot to cook under high pressure for 45 minutes. Allow for natural pressure release for 15 minutes, then carefully quick-release any remaining pressure.

  7. Transfer the pork to a cutting board and, using two forks, shred the meat into bite-sized pieces. The pork should be very tender and pull apart easily.

  8. Return the shredded pork to the pot and stir to coat evenly with the cooking liquid. If desired, turn on the sauté function and simmer for 5 minutes to reduce and concentrate the sauce.

  9. Serve the pulled pork warm on hamburger buns or slider buns, garnishing with the thinly sliced scallions.
