Bacon-Wrapped Chili Shrimp

Ingredients
8 tablespoons unsalted butter
1 tablespoon chili powder
2½ pounds peeled and deveined raw jumbo shrimp (U12 size)
1 pound thin bacon slices, cut in half
3 green onions, sliced
Directions
Preheat your oven to 400°F. Place a wire rack over a baking sheet and set aside.
In a small saucepan over medium heat, melt the butter and stir in the chili powder until well combined and fragrant, about 1 minute. Pour the chili-butter mixture into two small bowls, dividing it evenly.
Wrap each shrimp with one half slice of bacon, starting at the head and wrapping around the body. Secure each wrapped shrimp with a small wooden skewer or large toothpick, piercing both the bacon and shrimp to hold the wrap in place.
Arrange the bacon-wrapped shrimp in a single layer on the prepared wire rack. Using a pastry brush, coat the shrimp evenly with the chili butter from the first bowl.
Bake for 5 to 10 minutes, until the bacon is fully cooked and the shrimp are opaque and cooked through (internal temperature 145°F). Remove from the oven and immediately brush the shrimp with the reserved chili butter from the second bowl.
Transfer the cooked shrimp to a large serving platter and sprinkle generously with the sliced green onions. Serve immediately while hot.
