Ingredients

1 box bow tie pasta (about 12 oz)

1 ripe avocado, diced

1-2 handfuls cherry tomatoes (about 1 cup), quartered

2 large handfuls fresh spinach, roughly chopped

3/4 cup crumbled feta cheese

1/2 cup light champagne vinaigrette

Salt to taste

Black pepper to taste

Directions

  1. Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package directions until al dente. Drain well and transfer to a large mixing bowl. Refrigerate until chilled, about 10 minutes.

  2. While the pasta cools, prepare the vegetables. Quarter the cherry tomatoes and set aside.

  3. Dice the avocado into bite-sized pieces and gently add to the chilled pasta.
