Ingredients

4 cups Cool water

2 tablespoons Kosher salt

1 tablespoon Granulated sugar

4 Garlic cloves

4 medium Boneless, skinless chicken breasts

1 tablespoon Olive oil

Freshly ground black pepper

Directions

  1. In a large bowl, combine the cool water, kosher salt, and granulated sugar. Stir until the salt and sugar are completely dissolved.

  2. Crush the garlic cloves lightly and add them to the brine mixture for extra flavor.

  3. Place the chicken breasts into the brine solution. Make sure they are fully submerged. Cover and refrigerate for at least 8 hours, or up to 24 hours.

  4. Remove the chicken from the brine and pat completely dry with paper towels. Discard the brine and garlic.

  5. Brush the chicken breasts lightly with the olive oil on both sides.

  6. Season both sides generously with freshly ground black pepper.

  7. Preheat your grill to medium-high heat and lightly oil the grating to prevent sticking.

  8. Place the chicken breasts on the hot grill and cook for 5 to 7 minutes on the first side without moving them, until they develop grill marks.

  9. Flip the chicken and cook for another 5 to 7 minutes on the second side until the internal temperature reaches 165°F when measured with a meat thermometer in the thickest part of the breast.

  10. Transfer the grilled chicken to a clean plate and let rest for 3 to 5 minutes before serving. This allows the juices to redistribute throughout the meat.
