Ingredients

3 thin center-cut boneless pork chops (about 9 oz total)

1 tablespoon fresh lime juice

1 tablespoon canola oil

¼ teaspoon garlic powder

⅛ teaspoon salt

⅛ teaspoon ground black pepper

Directions

  1. Pat the pork chops dry with paper towels. Mix together the lime juice, canola oil, garlic powder, salt, and ground black pepper in a small bowl.

  2. Brush both sides of each pork chop with the lime marinade, allowing the flavors to coat evenly.

  3. Preheat a grill pan or outdoor grill to medium-high heat. Once hot, place the pork chops on the grill.

  4. Grill the pork chops for 5–6 minutes on the first side, then flip and grill for another 4–5 minutes, until the internal temperature reaches 145°F at the thickest part. The pork should be lightly browned and cooked through.

  5. Remove the pork chops from the grill and let them rest for 2–3 minutes. Serve with black bean salad of your choice.
