Ingredients

15 large shrimp, peeled and deveined

1 tablespoon butter

1/2 cup chopped onion

1/4 cup chopped fennel bulb

1 clove garlic, minced

1/4 cup Pernod or anise liqueur

1/4 cup sour cream

1 tablespoon fresh parsley, chopped

1/2 teaspoon salt

Directions

  1. Melt butter in a large skillet over medium-high heat.

  2. Add chopped onion and fennel to the skillet. Sauté for 2–3 minutes until softened and fragrant.

  3. Stir in minced garlic and cook for 30 seconds until aromatic.

  4. Add the shrimp to the skillet and cook for 2–3 minutes, stirring occasionally, until they begin to turn pink.

  5. Carefully pour in the Pernod (or anise liqueur) and let it simmer for 1 minute to reduce slightly and allow the alcohol to cook off.

  6. Remove from heat and stir in the sour cream and salt until well combined and smooth.

  7. Return the skillet to medium heat briefly and warm through, stirring gently, until the shrimp are fully opaque and cooked through (ensure an internal temperature of 145°F for the shrimp).

  8. Divide between serving plates, garnish with fresh chopped parsley, and serve immediately.
