Ingredients

⅓ cup Butter for the pan

4 Eggs

1 cup Milk

1 cup All-purpose flour

Butter for topping

Lemon juice

Powdered sugar for topping

Directions

  1. Preheat your oven to 425°F. Place 1/3 cup of butter in a 2- to 3-quart baking pan with sides and set in the oven to melt while you prepare the batter.

  2. Combine the eggs in a blender and blend until smooth. Gradually add the milk while blending, then slowly incorporate the flour until the batter is completely smooth and lump-free.

  3. Carefully remove the preheated pan from the oven with the melted butter and pour the batter directly into it.

  4. Return the pan to the oven and bake for 20 to 25 minutes, until the pancake is puffed and golden brown.

  5. Remove from the oven and top generously with additional butter, fresh lemon juice, and powdered sugar to taste. Serve immediately while still warm.
