Ingredients
1 seeded baguette
8 oz cream cheese, softened
2 tablespoons fresh chopped chives
3/4 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
3 Persian cucumbers, thinly sliced
2 tablespoons olive oil, for toasting
Directions
Preheat your oven to 375°F. Slice the seeded baguette diagonally into 1/4-inch thick pieces. Lightly brush both sides of each slice with olive oil and arrange on a baking sheet in a single layer.
Toast the baguette slices in the oven for 3-4 minutes per side, or until golden and crispy. Remove from oven and let cool slightly.
While the crostini are toasting, place the softened cream cheese in a bowl. Using a fork or a stand mixer with paddle attachment, beat the cream cheese until smooth and creamy.
Add the chopped fresh chives, garlic powder, and freshly ground black pepper to the cream cheese.
Mix thoroughly until all ingredients are evenly incorporated and the spread is uniform. Scrape down the sides of the bowl as needed to ensure complete blending.
Spread about 1 teaspoon of the garlic and chive cream cheese mixture onto each toasted crostini slice.
Top each crostini with 1-2 thin slices of fresh Persian cucumber. Serve immediately or cover and refrigerate until ready to serve.
