Ingredients

16 ounces frozen chopped spinach, thawed

2 tablespoons olive oil

1 small onion, finely minced

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/4 teaspoon ground nutmeg

1/4 teaspoon cayenne pepper powder

8 ounces mascarpone cheese, softened to room temperature

1/2 cup grated parmesan cheese

Directions

  1. Preheat your oven to 350°F (175°C).

  2. Place the thawed spinach in a clean kitchen towel or fine-mesh strainer and squeeze firmly to remove as much moisture as possible. Continue pressing until you've extracted most of the water and the spinach is relatively dry.

  3. Heat the olive oil in a medium sauté pan over medium heat until the oil shimmers and is hot to the touch.

  4. Add the minced onion to the hot oil and sauté gently, stirring frequently, for 4 to 5 minutes until the onion turns soft and translucent. Keep the heat moderate to prevent the onion from browning or burning.

  5. Add the squeezed spinach to the pan and stir constantly for about 30 seconds, just until the spinach is heated through while still maintaining its bright green color.

  6. Remove the pan from heat. Sprinkle the salt, black pepper, nutmeg, and cayenne pepper over the spinach mixture and toss well to distribute the seasonings evenly.

  7. Stir in the softened mascarpone cheese and grated parmesan cheese until completely incorporated and smooth.

  8. Transfer the mixture to one or two small oven-safe ramekins or a shallow baking dish.

  9. Bake uncovered for 30 minutes, until the cheese is bubbling gently around the edges and the top is lightly golden.

  10. Remove from the oven and allow to cool for 2 to 3 minutes before serving. Serve warm with pita chips, crusty bread, or fresh vegetable sticks.
