Ingredients
1 ripe avocado, halved, pitted, peeled, and diced
2 whole grain pita breads
1/4 cup canned chickpeas, rinsed and drained
2 tablespoons crumbled Cotija or Feta cheese
Salt to taste
Black pepper to taste
Directions
Wash your hands thoroughly with soap and warm water before handling ingredients.
Carefully cut each pita bread in half to create 4 pocket halves.
Divide the diced avocado, chickpeas, and crumbled cheese evenly among the 4 pita pocket halves, distributing each ingredient carefully into each pocket.
If desired for a warmed pocket, microwave the filled pitas on high for 15 to 20 seconds until just warm.
Season each pita pocket to taste with salt and black pepper before serving.
