Ingredients
1 batch brownie batter, prepared according to package directions (such as Ghirardelli Double Chocolate mix)
6 tablespoons softened butter
½ cup granulated sugar
3 ounces unsweetened chocolate, melted and cooled
½ cup pasteurized eggs (approximately 1½ large eggs)
Whipped cream for topping
Chocolate shavings for garnish
Directions
Prepare the brownie batter according to package instructions.
Divide the brownie batter evenly among 8 individual tart pans or pour into a single 9-inch tart pan, spreading into a thin, even layer approximately ½ inch thick.
Bake at the temperature specified on the package for 10-15 minutes until the brownie crust is just set but still slightly soft in the center. The internal temperature should reach 160°F for food safety. Allow to cool completely. If the brownie puffs slightly during baking, gently press down with your hands once cooled to create more room for the filling.
In a medium bowl, beat the softened butter and sugar together with an electric mixer on medium speed until light and fluffy, about 2-3 minutes, scraping down the sides as needed.
Add the melted and cooled chocolate to the butter mixture and mix on low speed until just combined. The mixture will appear slightly grainy, which is normal.
Add the pasteurized eggs on low speed, mixing just until incorporated. Once combined, gradually increase the mixer speed to medium-high while continuing to scrape the sides of the bowl. Beat for 3-5 minutes until the mixture becomes light, fluffy, and mousse-like.
Evenly divide and spread the chocolate mousse over the cooled brownie crust. Refrigerate for at least 4 hours until chilled and set.
Before serving, top each portion with a dollop of whipped cream and garnish with chocolate shavings.
