Ingredients

3 Zucchini

2 Tbs Olive oil

2 Tbs Balsamic vinegar

to taste Salt

to taste Black pepper

Directions

  1. Slice the zucchini lengthwise into strips approximately 1/4 inch thick, cutting each zucchini into 3-4 strips.

  2. In a large bowl, combine the zucchini strips, olive oil, and balsamic vinegar. Toss gently until all pieces are evenly coated with the oil and vinegar mixture.

  3. Season the zucchini with salt and pepper to taste and toss again to distribute seasoning evenly.

  4. Preheat your grill to medium-high heat. Place the zucchini strips directly on the grill grates.

  5. Grill for 3-4 minutes until the zucchini is tender with light grill marks, turning once halfway through cooking.

  6. Transfer the grilled zucchini to a serving plate and serve immediately while warm.

Every ingredient is stocked at every major Charlotte chain without exception—zucchini is a summer staple here, and olive oil, balsamic, salt, and pepper are universal pantry items. At roughly $0.60–$0.80 per zucchini and minimal oil use, you're looking at $1.50–$2.00 per serving, which is genuinely cheap for a side dish. The stated 10 minutes is honest: slice, brush, grill, done. The only minor catch is that grilled zucchini is best eaten warm the same night; it gets soft and less appealing cold, so plan it as an immediate side rather than a leftover.
