A quick and vibrant Thai-inspired beef stir-fry with tender strips of beef cooked in a hot wok alongside fresh red chilli, finished with a glossy oyster sauce and aromatic basil. Ready in just 10 minutes, it's perfect served alongside steamed jasmine rice.

Ingredients

2 tablespoons vegetable oil

400g beef steak or strip steak, cut into thin strips

1 red chilli, deseeded and thinly sliced

2 tablespoons oyster sauce

1 handful Handful of fresh basil leaves

Directions

  1. Heat a large wok or wide skillet over high heat until it begins to smoke. This ensures the beef will brown quickly and develop a light crust.

  2. Pour the vegetable oil into the hot wok and swirl to coat the bottom and sides evenly.

  3. Add the beef strips and red chilli to the wok immediately. Stir and toss continuously for 3 minutes, until the beef is lightly browned on the outside but still tender inside (internal temperature 145°F / 63°C for medium-rare doneness).

  4. Pour the oyster sauce over the beef and chilli, stirring constantly for 1-2 minutes until the sauce coats the meat and heats through.

  5. Remove from heat and stir in the basil leaves until evenly distributed. Serve immediately over steamed rice.
