Ingredients
2 cups Better Baking Mix
½ cup Granulated sugar
1 Egg
¼ cup Vegetable oil
⅔ cup Water
Directions
Thoroughly wash your hands with soap and warm water before beginning.
Preheat your oven to 400°F. Lightly grease a 12-cup muffin pan with oil or cooking spray to prevent sticking.
In a large mixing bowl, whisk together the baking mix and sugar until well combined.
Crack the egg into a small bowl and beat it lightly with a fork until the yolk and white are fully blended.
Pour the beaten egg, vegetable oil, and water into the bowl with the dry ingredients.
Gently stir the mixture with a spoon just until the dry ingredients are moistened and the batter comes together. Do not overmix; some lumps are perfectly fine.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 15–18 minutes, or until the muffin tops are golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Remove the pan from the oven and allow the muffins to cool in the pan for 5 minutes before turning them out onto a wire rack.
