Ingredients

2 cups Better Baking Mix

½ cup Granulated sugar

1 Egg

¼ cup Vegetable oil

⅔ cup Water

Directions

  1. Thoroughly wash your hands with soap and warm water before beginning.

  2. Preheat your oven to 400°F. Lightly grease a 12-cup muffin pan with oil or cooking spray to prevent sticking.

  3. In a large mixing bowl, whisk together the baking mix and sugar until well combined.

  4. Crack the egg into a small bowl and beat it lightly with a fork until the yolk and white are fully blended.

  5. Pour the beaten egg, vegetable oil, and water into the bowl with the dry ingredients.

  6. Gently stir the mixture with a spoon just until the dry ingredients are moistened and the batter comes together. Do not overmix; some lumps are perfectly fine.

  7. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

  8. Bake for 15–18 minutes, or until the muffin tops are golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs.

  9. Remove the pan from the oven and allow the muffins to cool in the pan for 5 minutes before turning them out onto a wire rack.
