Ingredients
1½ lb Ground pork
1 slice Red onion, sliced
¾ cup Barbecue sauce
to taste Coarse salt
to taste Ground black pepper
for cooking Vegetable oil
4 Soft onion rolls
Directions
Place the ground pork in a large mixing bowl. Finely mince the red onion slice and add it to the pork. Season generously with coarse salt and ground black pepper to taste.
Gently mix the pork, onion, salt, and pepper together with your hands until just combined—do not overwork the mixture or the patties will be dense. Divide the mixture into 4 equal portions.
Shape each portion into a patty about ¾ inch thick, making sure each one is sturdy and holds together. Make a slight indent in the center of each patty with your thumb to help them cook evenly.
Heat a large skillet or griddle over medium-high heat and lightly coat with vegetable oil. Once the oil is hot, carefully place the pork patties onto the cooking surface.
Cook the patties for 5–6 minutes on the first side without moving them, until they develop a golden-brown crust. Flip each patty carefully and cook for another 5–6 minutes on the second side, until the internal temperature reaches 160°F.
During the last minute of cooking, brush or spoon the barbecue sauce generously over the top of each patty, allowing it to warm and caramelize slightly.
Toast the soft onion rolls lightly in the skillet for about 30 seconds per side, or in a toaster until just warmed and lightly golden.
Place each cooked pork patty onto a toasted roll and serve immediately while hot. Spoon any additional barbecue sauce alongside or on top as desired.
