1 large onion, chopped
1/2 red bell pepper, chopped
1/2 pound chicken breast, cut into 1-inch cubes
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup fresh cilantro, minced
Directions
Heat butter in a large skillet over medium-high heat. Once melted and shimmering, add the chopped onion and diced red bell pepper. Sauté for 3 to 4 minutes, stirring occasionally, until the vegetables begin to soften.
Add the cubed chicken breast to the skillet and season with ground cumin, salt, and black pepper. Stir to coat the chicken evenly with the spices.
Cook the chicken for 8 to 10 minutes, stirring frequently, until the external surface is golden and opaque. Ensure the internal temperature reaches 165°F when measured with a meat thermometer at the thickest part.
Remove the skillet from heat and stir in the fresh minced cilantro, distributing it throughout the mixture. Taste and adjust seasoning if needed.
Divide between two plates and serve immediately. Pair with rice, roasted vegetables, or a crisp green salad.
