Ingredients

¾ cup whole grain pasta shells

2 tablespoons Philadelphia cooking cream

1 teaspoon minced garlic

½ cup canned artichoke hearts, quartered

½ cup white beans, drained and rinsed

1 handful fresh spinach

2 tablespoons grated Parmesan cheese, plus more for topping

Ground black pepper to taste

Directions

  1. Bring a pot of salted water to a boil and cook the pasta shells according to package directions until al dente, about 8-10 minutes. Drain well and set aside.

  2. Return the drained pasta to the pot and reduce heat to medium-low.

  3. Add the cooking cream, minced garlic, artichoke hearts, and white beans to the pot. Stir gently until all ingredients are combined and the mixture is heated through, about 2-3 minutes.

  4. Add the fresh spinach and stir constantly until the leaves wilt slightly, about 1-2 minutes.

  5. Stir in the 2 tablespoons of grated Parmesan cheese until distributed throughout.

  6. Transfer to a serving bowl, top with additional Parmesan cheese and ground black pepper to taste, and serve immediately.
