Pork Dumplings with Chili Oil Sauce

Tender pork dumplings pan-seared until crispy, then steamed to perfection and served with a flavorful chili oil dipping sauce. A classic Asian-inspired appetizer or main course that's easier to make than you'd think.

Ingredients
1 lb ground pork
1 large egg
2 Tbsp low sodium soy sauce
1 Tbsp sesame oil
1 Tbsp rice wine vinegar
1 Tbsp dark brown sugar
3 garlic cloves, minced
2 inches fresh ginger, minced
¼ tsp coarse salt
¼ tsp ground black pepper
½ cup green onion, finely chopped
32 wonton wrappers
3 Tbsp canola oil
2 cups water or stock
Directions
In a large bowl, combine the ground pork, egg, soy sauce, sesame oil, rice wine vinegar, brown sugar, minced garlic, minced ginger, salt, black pepper, and green onion. Mix thoroughly until all ingredients are evenly incorporated and the mixture holds together well.
Lay wonton wrappers flat on a clean surface. Place approximately 1 tablespoon of the pork filling in the center of each wrapper. Lightly wet the edges with water, then fold the corners toward the center and pinch firmly to seal, creating a small bundle shape.
Heat the canola oil in a large skillet over medium-high heat until it shimmers. Working in batches of 8, carefully place dumplings flat-side down in the hot oil and sear for 2-3 minutes until the bottoms are golden brown and crispy.
While dumplings are searing, prepare the chili oil sauce by whisking together 3 tablespoons of chili oil, 2 tablespoons of soy sauce, 1 teaspoon of brown sugar, and ½ teaspoon of crushed red pepper flakes in a small bowl. Set aside.
Increase heat to high. Pour ½ cup of water or stock around the dumplings (not directly on top), cover the skillet with a lid, and steam for 4-5 minutes until most of the liquid is absorbed and the dumplings are tender but still hold their shape. Transfer the cooked dumplings to a serving plate.
Repeat the searing and steaming process with the remaining dumplings in batches of 8 until all are cooked through.
Arrange the cooked dumplings on a serving platter and serve warm with the chili oil sauce on the side for dipping.
